Sheet Pan Banana Chocolate Chip Pancakes

We made this one morning with our grandson - he loved them.   I think his favorite part was probably the chocolate chips.   


Ingredients:

3-4 ripe bananas

2 eggs

1 + ¼ cup milk of choice

¼ cup avocado oil

1 teaspoon of vanilla

2 cups of almond flour OR St. Arthur’s Unbleached flour

1 tablespoon of baking powder

Optional add-ins (usually about a ½ cup): chocolate chips, blueberries, nuts


Directions:

Mix together all the ingredients, wait to mix in your add-ins at the end. Spray a 9x13 cookie sheet with edges and pour the mixture evenly into the pan. Bake at 350 degrees for about 18 minutes (depends on your oven) Cool, cut & store in the fridge. Heat up as needed throughout the week! Or, eat right away!
